Abstract : This study has the purpose to find antioxidant and antibacterial activity of Carissa carandas, to develop karonda glycerin soap, canned karonda juice and to improve products in Ampawa district. DPPH assay , reducing power method, phosphomolybdenum method and total phenolic compound method were used to find antioxidant activity. The researcher found that ripe karonda seed extract by using methanol has good antioxidant activity compared with other solvents e.g. ethanol, hexane, ethyl acetate, etc. From antibacterial activity results, the researcher found that unripe seed extract from ethyl acetate could inhibited the growth of E. coli , while unripe and ripe seed extract with methanol could not inhibited the growth of 4 strains of pathogenic bacteria e.g. Listeria monocytogenes, Staphylococcus aureus, Escherichia coli and Salmonella typhimurium. Karonda glycerine soap showed effectively against pathogenic bacteria. Karonda juice prepared from frozen fruit has a lower antioxidant activity when compared with karonda juice made from fresh fruit. SC50 of karonda juice prepared from fresh and frozen fruits is 2.11-2.76% and 2.4-3.36%. Producer should prepared karonda juice from fresh fruit to produce karonda juice with good antioxidant activity.
