Pulsed Vacuum Drying Characteristics of Momordica Charantia Slices: An Experimental Study

Abstract
Abstract - This paper pertains to the experimental investigation of the effect of different operating conditions such as the drying temperature, vacuum pressure and pulsing ratio on the drying rate and drying time during the process of Pulsed Vacuum Drying (PVD) of Momordica Charantia slices. Different combinations of the operating conditions were chosen and the process optimization was done based on the drying time. The optimum drying temperature, vacuum pressure and pulsing ratio was found out to be 70oC, 8000 Pa and 15:5 for the Pulsed vacuum drying of M. Charantia slices.
